The Easter (extra) long weekend is such a perfect excuse to plan a getaway.
This year, it's the Hunter Valley with a stopover in Newcastle. After reading various reviews on which restaurants to try, Muse Dining looked the most promising. Muse is split into two areas, with the more casual cafe area by day, and a formal setting during the night time.

Pan fried Canadian sea scallops with sweet corn cream, speck lardon and sweet pea butter, red vein sorrel
Scallops are always my favourite entree to order, and these were a pleasure to eat, especially paired with the sweet corn cream.
Fried zucchini flowers stuffed with a salmon and chive mousse, shaved fennel salad, orange dressing and creme fraiche
Pan fried duck breast (served pink) with smoked bacon and white bean cream, peach, cress and macadamia salad
Compared to the entrees, this duck dish was a bit of a letdown as it lacked flavour.
Crispy skin Berkshire pork belly with cauliflower puree, apple and mustard leaf salad, pomegranate dressing
Can't go wrong with a giant slab of fatty pork and crackling...
Overall, it's a lovely place to spend an afternoon. I wouldn't mind trying the evening restaurant menu as the desserts sounded very nice from what I saw on their website menu.
It was great weather for winery hopping and checking out all the little stores, including the Smelly cheese store and the chocolate shop.
